The lion's mane mushroom (Hericium erinaceus) is an edible mushroom that is native to Asia, North America, and Europe. This mushroom species is also referred to as the mountain priest mushroom, bearded hedgehog mushroom, shishigashida, and yamabushitake. It is also referred to as bearded tooth, wig mushroom, or pom-pom mushroom in certain parts of the world. Occasionally, monkey head mushroom and monkey monk mushroom are used in place of mountain priest mushroom, in China and Japan respectively. As the name suggests, the mushroom has long strands hence its resemblance to the mane of a lion or a poofy pet. The colour of the mushrooms mostly lies between white and yellow.

The mushroom thrives in temperate climates where they are found growing naturally in the wild. However, spotting them might sometimes prove to be an uphill task since they are found growing on the higher ends of the hardwood trees. The mushrooms grow on old hardwood trees, with a preference for specific ones. Some of the popular trees on which the mushrooms grow include birches, American beech, sycamore, walnut, oak, and broadleaf trees. The mushroom also grows predominantly on felled trees and logs. Those that have been freshly felled are the best for the cultivation of the mushrooms. The most useful and potent part of the lion's mane mushroom is the fruiting body. To obtain lion’s mane mushroom powder, the fruiting bodies are harvested and thoroughly cleaned using water, and then squeezed similarly to clothes. This is done to get rid of all the excess water that might be absorbed by the spongy mushrooms. They are then ground to obtain fine, organic powder. During harvesting, the mushrooms are handled with care to avoid bruising them and hence reducing their shelf life.

Lion’s mane mushroom has a rich history that spans over 2000 years, especially in ancient Asia. The mushroom also featured predominantly in Traditional Chinese herbalism. It was especially used among the higher social and political classes in ancient society. In Asian society, different sets of Buddhist monks made tea out of this mushroom powder. They believed that it helped them meditate and focus better as a result of the mental clarity that came out of it. Lion’s mane mushroom was a favourite for those who were allergic to gluten since it is gluten-free. The mushroom was also consumed quite often by those who had problems finding sleep. They claimed that it had a calming effect which aided them to fall into sleep without even noticing. Some people also replaced the meat in their diets with mushrooms. This is because of the meaty feel that they possess. Those who had allergies or preferred to avoid seafood, lamb, and pork replaced them with lion’s mane mushrooms. To date, the mushrooms form a key part of numerous dishes, soups, and salads. They are preferred for their ability to blend into different flavours attributed to different ingredients and spices.
