About Ginger

The ginger plant (Zingiber officinale) is a herbaceous evergreen plant that originated from India and Southeastern Asia. The name ginger was derived from the Sanskrit term “srngaveram” meaning “horn-like body” describing the appearance of the ginger root. It is also widely cultivated in South America, Africa, the Middle East, and Australia. In Persia, it was called “zangabil”. Ginger is classified under the Zingiberaceae family, commonly referred to as the ginger family. Ginger is used when referring to the species of plants that fall under the genus Zingiber or “the true gingers”. Some plants from this family which also go by the name ginger are Asarum canadense popularly referred to as “wild ginger” which flourishes in the Northern parts of America and Alpinia sp. which is referred to as the “Thai or blue ginger”. Different terms used in different parts of the world include Jamaican ginger, Cochin ginger, Ingwer, Black ginger, Gan Jiang, African ginger, and Race ginger. The potent root is a relative to some commonly known kitchen spices e.g. cardamom and turmeric.

Ginger is cultivated for its horizontally growing stem which is known as a rhizome. This stem grows and is harvested from below the ground. It is light brown on the outside and light beige on the inside. The rhizome has nodes on its upper and lower sides. The upper nodes give rise to shoots. The shoots branch into stems that have green glossy leaves with an alternate arrangement. The lower nodes give rise to either a fleshy or fibrous root system. The fibrous roots provide support to the plant while also helping it to acquire essential nutrients from the soil. The flowers are cylindrical and have light-yellow colour. The term ginger can be used to refer to both the plant and its fleshy rhizome. The cultivation of ginger requires soils that are properly drained. It grows well on loam soil that has been enriched with organic manure. Annual rainfall of about 1500mm with fairly warm temperatures are usually sufficient. Extremely cold weather that causes frosting is not preferred. Once the roots are fully grown, they are harvested and dried in the sun. They are then ground to a fine powder. This powder is then enclosed in shells manufactured from gelatine to form ginger capsules. Ginger has a sweet and spicy flavour.

Ginger has been used for over 5000 years. Its earliest use can be traced back to ancient Chinese and Indian civilizations. It was held in high esteem and used as a nourishing cuisine. Around the 5th century BC, indigenous Chinese tribes consumed ginger before going on sea expeditions as they believed it would help them be more tolerant of the harsh conditions experienced at sea. During the era when the Roman Empire was exploring other regions of the world, they obtained ginger from the Indian subcontinent. They then established trade routes for ginger which became very popular across Europe. With the decline of the Roman Empire, the Arabs replaced the Romans in the ginger trade. This led to an increase in the cost of ginger so much that it became less affordable to the average person in their countries of origin. The famous Marco polo recorded the use of ginger in many of his diaries. This contributed to the increased trading of this commodity during the 13th century. Early traders realised that the high demand for ginger would soon lead to its depletion. As a result, they came up with preserved ginger confections. Ginger was then introduced to Africa and the Caribbean Islands in the 15th century by explorers. The inhabitants of this region have been adding it to their dishes ever since.
